For redfish you want to have your boat off bank, and depending on the depth of water will determine your length between the cork and bait.You want some slack on the line, and when it hits the water pop your rod twice. Sometimes we'll let it sit a few seconds before popping again.
You'll repeat this a few times before casting again or changing your length / slack. If you don't get a good "clunk" then you want more slack.

the 7/0 shank is 1.75 inches, the 8/0 and 9/0 shanks are 2 inches. The difference between the 8/0 and 9/0 shanks are the throat of the hook -- the 9/0 has a bigger throat, with more clearance between tip and shank. See the picture below that I just took for comparison between the three ballyhoo hooks

My personal favorite position for this lure is short rigger (corner) position. I prefer to keep a bit of line angle on the face to give it good action. The lure with appropriate line angle will come up, spit water, then return to expel its bubble trail. After the bubble trail stops the lure will rip side to side quickly before returning to the surface to start the action over again. Great Blue Marlin lure.

The Fathom Offshore Agitator bar is extremely versatile, and can be fished from almost any position. The angled wings force the bird to skitter on the surface, so line angle from an outrigger isn't as important as it may be for other lures. We have run the bar from a flat line, both rigger positions, and the shotgun all with great success. My personal preference is short rigger, I find the action of the bird acts almost as a teaser as well as a rigged bait, increasing the attention of all the lures in the spread.

The Torpedo is extremely versatile. You can run it on the surface, or you can run it subsurface with a trolling lead or down planer. The difference is the speed between the Jimmy Rig and the Torpedo Lantern, both can be run up or down, but the Jimmy Rig is rigged for ballyhoo so you typically want to run it slower so the bait wont wash out.

Great question: if your looking to use this dredge specifically for Mahi, I would recommend the Green. While Mahi will come to other dredge colors, we go back to the schooling mentality of a Mahi. They typically hunt and swim in schools, which is why people will often leave a dolphin on the line when chunking, it keeps the other dolphin close. Same with a Mahi colored dredge. Pink has always been a solid producer for us as well, as it mimics a natural squid color, a food of choice for dolphin and most other pelagics.
